The 2016 Summer Olympics are set to be an exciting 19 days of great athleticism, patriotic pageantry, and world class sportsmanship.  You don’t want to miss the action and since it will be the most broadcast Olympic games ever you won’t have to.

En Papillote – Easy Prep/Easy Clean Up Grilling Method

With such great amenities at your Pompano Beach apartment like the resort style pool, outside seating terrace and outdoor kitchen and grilling area, it makes sense to grill out and enjoy the warm summer nights.

Cooking in parchment paper (en papillote) is a great way to minimize both prep and clean-up, giving you more time to relax.  Here are some recipes, tips, and ideas.

Fish is the perfect en papillote meal.  Buy fish and cut in to meal size portions, add sliced lemon, salt, pepper, and fresh dill.  Cut a piece of parchment paper that is twice the size of your fish in both length and width.  Place the fish in the middle and fold up the longest sides twice, then wrap the ends with cooking string and cook on the grill on medium to medium low heat.

This stacked vegetables en papillote is an easy make ahead dish.  Slice your favorite vegetables such as eggplant, onions, squash, mushrooms and potatoes.  The thickness should be in proportion to cooking time.  For example the potatoes take a little longer than squash so should be a bit thinner.  Line the vegetables in a row, (potatoes first), brush with olive oil and seasonings, place the next vegetable on top, repeat until you have created a stack.  Now fold the paper, making a pouch and truss the ends with cooking strings.  Cook on medium to low heat.

Halved peaches grilled with local honey makes a nice and healthy desert.

Board a shuttle boat for short trip to tour the Hillsboro Lighthouse on Saturday, July 16, 2016.  Sponsored by the HLPS, this is an enjoyable way to spend an afternoon and to learn more about the  lighthouse and its significance in our nation’s maritime history.  Shuttles leave every 1/2 hour from Alsdorf Park.  If you want to climb the stairs of the lighthouse, you can not wear flip flops or open toe shoes and children must be four feet tall.

Plant an Herb Garden on Your Patio

Pompano Beach has its fair share of bars, as a matter of fact there are more than 20 bars within minutes from your Pompano Beach apartment. But what makes a good bar?  According to Esquire magazine and TripAdvisor, there are a number of elements that make a bar stand out.  Here are the top ten elements that make a good bar!

  1. Good Bar Stools – if the stools aren’t comfortable and at the right height, you just don’t want to linger long!
  2. Good Bar – the best bars are interesting, whether it is wood, granite, marble, or tile, a good bar just feels right.
  3. Good Drink List – a good drink list doesn’t need to be expansive, but it should make sense and have a range of types and prices.

Now we can’t say that these bars have all of these elements, but the reviews are good and we checked to make sure that they had at least a few of the items on our top ten list.

There’s no need to ask the bartender what is on tap at Bangin’ Banjo Brewing Company, their beer menu is posted on a TV and the wall, they serve tastings on a Bangin’ Banjo, their taps are mounted on a piece of wood, the chairs are comfy and the staff knows a thing or two about Brew!

No best bar list would be complete without a local, sports, dive bar!  That is where Greenbrier Bar fits in! This rowdy bar has darts, pool, scantily clad waitresses, and it the personification of a dive bar, but fun!
