En Papillote – Easy Prep/Easy Clean Up Grilling Method

Cooking in parchment paper (en papillote) is a great way to minimize both prep and clean-up, giving you more time to relax.  Here are some recipes, tips, and ideas.

Fish is the perfect en papillote meal.  Buy fish and cut in to meal size portions, add sliced lemon, salt, pepper, and fresh dill.  Cut a piece of parchment paper that is twice the size of your fish in both length and width.  Place the fish in the middle and fold up the longest sides twice, then wrap the ends with cooking string and cook on the grill on medium to medium low heat.

This stacked vegetables en papillote is an easy make ahead dish.  Slice your favorite vegetables such as eggplant, onions, squash, mushrooms and potatoes.  The thickness should be in proportion to cooking time.  For example the potatoes take a little longer than squash so should be a bit thinner.  Line the vegetables in a row, (potatoes first), brush with olive oil and seasonings, place the next vegetable on top, repeat until you have created a stack.  Now fold the paper, making a pouch and truss the ends with cooking strings.  Cook on medium to low heat.
